Oatmeal Pancakes Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 1/4 cup melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • Additional butter or oil for cooking

Instructions:

  1. In a large mixing bowl, combine the flour, oats, sugar, baking powder, baking soda, and salt.
  2. In a separate mixing bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this will result in tough pancakes.
  4. Heat a skillet or griddle over medium heat. Melt a small amount of butter or oil in the skillet.
  5. Using a ladle or measuring cup, pour the batter onto the skillet or griddle. Cook the pancakes until bubbles form on the surface and the edges start to look set, about 2-3 minutes. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
  6. Repeat with the remaining batter, adding more butter or oil as needed.
  7. Serve the oatmeal pancakes warm with your favorite toppings such as maple syrup, butter, or fresh fruit.
