Ingredients:

-White Potatoes, 6 or 7
-Yellow Onion
-Fresh Sage, a tablespoon or two snipped, or about half of that if using dry
-Ham, maybe half a pound? I just used what I had leftover
-Cheddar Cheese, about four cups grated. I used a mix of white and yellow.
-Butter, 6 tablespoons
-Flour, 1/3 cup
-Milk, 3 cups
-Salt/Pepper

Directions:

Thinly slice the onion into rings.
Grasp the sage and snip it.
Scrub the potatoes before slicing them thinly. You don’t have to peel them unless you can’t stand not doing so.
Prepare the ham by dicing it.
Cheese should be grated.
Melt the butter in a large saucepan over medium heat.
Stir in the flour until it is thoroughly combined and the sauce begins to thicken.Gradually pour in the milk while constantly stirring. Cook until the sauce thickens, about 5 minutes.
In the bottom of a rectangular baking dish, spread a small amount of white sauce. Place a layer of potatoes on top of each other, slightly overlapping.

Arrange a couple onion rings on the plate, then top with ham and sage.
A considerable amount of cheese should be sprinkled on top.
Drizzle with white sauce, then repeat the layering process.
Finish with a white sauce layer and a sprinkling of cheese. Season with coarse ground pepper and salt.
Bake for about an hour at 350 degrees in the lower section of the oven, or until the potatoes are soft. Allow for a few minutes of rest before serving.
It was made a little healthier with the addition of steamed broccoli on the side. Enjoy!
