Heat Milk to 115 degrees Fahrenheit.
Add 2 tablespoons sugar and yeast.
Proof 15 minutes.
Soak raisins in boiling water.
Beat 3 eggs in a stand mixer.
Add remaining sugar, melted butter, lemon zest and vanilla.
Mix the salt with the flour.
Slowly add flour to wet ingredients.
Don’t over mix.
Mix in raisins by hand.
Scrape sides of mixer bowl and cover.
Let the dough rise for 1 hour in a warm place.
Place dough in greased 8” x 3” round pan and let rise ½ hour. Any deep pan will work.
Preheat oven to 350 degrees Fahrenheit.
Bake for 40 to 45 minutes or until a skewer poked in the Babka comes out clean.
