We wanted burgers for dinner tonight so I made some fully loaded spicy chorizo turkey burgers. I added creamy fresh guacamole, melted pepper jack cheese, cooked jalapeño & onion slices, another slice of melted pepper jack cheese, & topped it with a generous amount of jalapeño mayonnaise. All on a toasted brioche bun. Served with some taco flavored tostada chips. **********Recipes Below**************
Fully Loaded Spicy Turkey Chorizo Burgers
For Jalapeño Mayonnaise
Ingredients:
1/2 cup mayonnaise (I used Heinz brand)
3 whole pickled jalapeños, diced
Salt & pepper to taste
In bowl add the mayonnaise & diced jalapeños. Mix well & if needed add salt & pepper to your taste preference. Place in refrigerator until ready to use.
For Guacamole
Ingredients:
3 large avocados, sliced in half & pits removed
1/3 cup red onion, diced
1/3 cup tomato, diced
1/4 cup jalapeño, deseeded & diced
Salt & pepper to taste
In bowl, add scooped avocado pulp, & mash either with fork or potato masher until semi smooth consistency.
Add the onion, tomato, jalapeño, salt & pepper & with spoon mix until well incorporated. Add more salt & pepper if needed.
Cover with plastic wrap & place in refrigerator until ready to use.
Fully Loaded Chorizo Burgers
Ingredients:
8 ounces pork chorizo (I used La Banderita brand but you can use what you like.)
1 pound lean ground turkey
4 garlic cloves, finely minced
1 teaspoon chili powder
1 teaspoon dried chili flakes
2 tablespoons cooking oil
4 large jalapeño peppers, deseeded, & cut into strips
1 large white onion, peeled & cut into slices
8 slices pepper jack cheese
8 brioche hamburger buns
In skillet, on medium high heat, add the chorizo, cook & crumble with spoon while cooking until it’s lightly crispy & well cooked. Drain the fat from cooked chorizo.
In medium bowl, add the turkey meat, drained cooked chorizo, garlic, chili powder, & chili flakes. Mix well & form into 4 even patties. And set aside on a plate.
In a large skillet, heat 1 tablespoon cooking oil over medium high heat. Add in the sliced jalapeño & onion slices. Saute until they’re tender, about 5-7 minutes. Remove from skillet & place on a plate lined with paper towels.
In the same skillet where the peppers & onions were cooked, add a tablespoon of cooking oil, then add the burger patties & cook until they’re completely cooked through about 5-7 minutes on each side. When patties are cooked through top each cooked patty with a slice of pepper jack cheese, & then top the cheese with a heaping amount of the cooked onion & jalapeño mixture, & then top the onion & jalapeño slices with another slice of pepper jack cheese. Cover skillet just until cheese completely melts. Remove Burgers from pan & place on a large platter and allow to rest. While the patties are resting lightly toast the tops & bottoms of the hamburger buns in toaster. Remove from toaster & slather the bottoms with the guacamole, then place your prepared patties on top of the guacamole, & finally slather the hamburger bun tops with the jalapeño mayonnaise. Serve & enjoy.
