Slow Cooker Blackberry Cobbler

This is so amazingly delicious and unbelievably easy to make! Best of all, no baking required as your slow cooker does all the work. Serve warm with pouring cream or ice cream – heavenly Slow Cooker Blackberry Cobbler!

Ingredients

  • 1 cup all-purpose flour
  •  cups sugar (divided into 3/4 and 1/2 cups)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 2 eggs
  • ¼ cup milk
  • ¼ cup vegetable oil
  • 3 punnets (6 oz each) blackberries (or your favorite Berries)
  • ½ cup water
  • Heavy or whipped cream or vanilla ice cream for topping (for serving)

Instructions

  1. In the slow cooker, whisk together the flour, 3/4 cup sugar, baking powder, salt, cinnamon, and nutmeg.

  2. Combine the eggs, milk, and oil in a bowl then stir into the dry ingredients just until moistened.

  3. In a large saucepan, combine the blackberries, water, and remaining sugar. Bring to a boil.

  4. Once it has boiled, remove from the heat and immediately, pour it over the batter. Cover and cook on high for 2 to 2-1/2 hours or until a toothpick inserted into the batter comes out clean.

  5. Turn the slow cooker off. Uncover and let stand for 20-30 minutes before serving. Top with vanilla ice cream or whipped cream!
