Polish Florentine Cookies (Florentynki)

This recipe for Polish florentines or florentynki (floh-rrehn-TIN-kee) is made with candied orange peel (and other candied fruits, if desired), nuts and a smear of chocolate on the bottom.

INGREDIENTS

  • 5 ounces almonds (blanched, skinless, finely chopped)

  • 3 tablespoons ​all purpose flour

  • 3/4 cup white sugar

  • 2 tablespoons heavy cream

  • 2 tablespoons finely chopped candied orange peel or zest

  • 2 tablespoons light corn syrup

  • 5 tablespoons butter

  • 1/2 teaspoon vanilla extract

DIRECTIONS

  • Preheat oven to 350 degrees F. Line a baking sheet with parchment or a non-stick mat.
  • In a bowl, stir together the finely chopped almonds, the all-purpose flour and the candied orange peel or zest
