°2 t chili powder
 °½ t kosher salt
 °¼ t cayenne pepper
 °8 ear corn, unshelled
 °4 limes
 °½ cup crumbled Cotija cheese
*Step by step
Preheat an outdoor grill to high heat and lightly oil the grill.
Combine chili powder, kosher salt and cayenne pepper in a small bowl. Set mixed seasonings aside.
Removing most of the silk when leaving 2-3 layers of husk on every corn cob.
Cook corn on preheated grill until husks are lightly charred, turning every 3 to 4 minutes, 12 to 14 minutes. Let cool slightly. Carefully removing pods, leaving stems as handles.
Squeeze 1/2 lime on each ear of corn. Sprinkle each with mixed seasonings to taste and top generously with Cotija cheese.
