For those of you who have ever enjoyed a meal of Cheese Enchiladas at Luby’s Cafeteria know that these are among some of the best in Texas. For those of you who might not know… I was a Luby’s manager for almost two years of my life completing not only the Luby’s managerial school in San Antonio but I worked at the Luby’s Cafeteria in Bryan/College Station on Texas Avenue. This recipes was taken from the Luby’s 50th Anniversary Recipe Collection and I for one can vouch for its authenticity. So if you ever wanted a Cheese enchilada recipe that was good and easy… here it is!

Ingredients:

Chili Sauce:
• 1 ½ pounds lean ground beef
• ½ cup chopped onion
• 2 teaspoons garlic powder
• 1 ½ teaspoons salt
• 1 teaspoon pepper
• 8 cups beef broth or bouillon
• 2 cans (14 ½ ounces each) whole peeled tomatoes
• 3 tablespoons chili powder
• 1 tablespoon plus 1 ½ teaspoons paprika
• 1 tablespoon ground cumin
• ⅓ cup cornstarch
• ⅓ cup water
