Korean style ribs recipe

Ingredients

  • 2 tablespoons rice vinegar
  • 8 large garlic cloves, sliced
  • 2 tablespoons chopped ginger
  • ½ cup soy sauce
  • 2 cups beef broth
  • ¼ cup brown sugar
  • 2 tablespoons gochujang (fermented Korean chili paste)
  • 1 tablespoon sesame oil
  • 2 tablespoons oil
  • Salt and black pepper
  • 1 medium rib eye
  • 2 tablespoons cornstarch
  • Chives for garnish
  • 2 tablespoons toasted sesame seeds

Preparation

  1. Combine the first eight ingredients in a slow cooker over high heat.
  2. Heat 2 tablespoons oil in a large skillet; cook ribs in the hot oil with salt and pepper. Once browned on both sides, add the ribs to the slow cooker. Let cook covered for four to six hours.
  3. Separately, combine the cornstarch with four tablespoons of the liquid where the ribs were cooked; stir until well integrated. Pour this mixture into the remaining broth, stir and let it simmer for about twenty minutes. Turn off the slow cooker and let stand 10 minutes.
  4. Serve the ribs with sesame seeds, chives and, if you want something more Korean, serve with kimchi, cooked brown rice, and shredded carrots.
