I love bundled old cookbooks and I have a bunch of books that I pull up and flip every now and then when I’m looking for recipe inspiration. Some are from church groups or social clubs, and when we travel, I keep my eyes open for local friends to browse for inspiration in my American Eats series.
* Ingredients :
° 2 granny Smith Apples
° 1 cup water
° 1 cup split sugar
° 1 stick of butter
° 1/4 teaspoon. Vanilla extract
° 8 packaged biscuits (I use Pillsbury butter)
° 4 teaspoons ground cinnamon
* Directions :
The oven is heated to 375 degrees. Peel, pulp and slice apples vertically into 8 slices per slice. Cover it with cold water to prevent it from turning brown while preparing the rest of the recipe.
In a medium saucepan, mix water with 3/4 cup of sugar, butter, and vanilla on a stove and bring the mixture to a boil.
Separate each biscuit in half. Wrap a layer of biscuit dough around a slice of apple, stretching it slightly, and covering the bottom.
Place the rolled slices, side down, on a 9 x 13 baking tray. Pour the hot sugar mixture over the apple slices.
Mix a quarter cup of the remaining sugar with cinnamon and sprinkle it on top of the rolled apples. Baking about 36 min . Serving something warm with vanilla & ice cream !
