Ingredients (4 people):
– 8g of fresh yeast
– 400g of flour
– 40g of sugar
– 200ml of milk
– 1 egg
– 80g of butter
– 2 bags of vanilla sugar
– 1 bar of chocolate
– one pinch of salt

 Pour the fresh yeast in a bowl, add the sugar, then add the milk which should be lukewarm, mix everything well.
_ add the butter melted in the microwave or in a double boiler, then add the vanilla sugar.
_ Separate the white from the egg yolk and put each in a bowl, add the white to the mixture, and set the yolk aside.
_ Mix the ingredients, add the salt, add the sifted flour little by little while mixing. Knead the dough, always adding the flour little by little. Once all the flour has been incorporated, continue to knead the dough on the work surface, form a ball and put it back in the bowl, wrap the bowl in film and let stand for 1 hour in a warm place until it doubles in volume.
_ Take the dough again and degas it with pressure, form small balls with the dough.


Take the chocolate bar and cut it into small squares, take a ball and flatten the dough, put a square of chocolate in the middle of the dough and fold back the edges, reform your ball, transfer the ball to a baking sheet with a baking paper, repeat the operation for the remaining balls.
_ Cover the balls with a cloth and let stand for 20 minutes.
_ Add 2 teaspoons of milk to the bowl with the egg yolk you have set aside, mix.
_ Brush the pains au lait filled with chocolate.
