Instructions

Using either knife, mandolin or shredder with slicing option, slice the cucumber very thinly and place in a bowl;

Add salt to the cucumbers, mix well and set aside for at least 15 minutes (ideally for 30 minutes);

After at least 15 minutes, strain the cucumbers through a colander and squeeze out any leftover water;

Add cucumbers back into a bowl, add chopped dill and spring onions; Mix in the sour cream and combine together;

Check for seasoning and add salt and pepper as needed.

You can chill it before serving.
Notes
If you choose to lightly pickle the cucumber you may not need to add any seasoning into the salad.
