Herb Butter Steak Bites with Creamy Garlic Potato Foil Packets

Ingredients
For the Steak Bites:
– 1 1/2 pounds sirloin steak, cut into 1-inch cubes
– 2 tablespoons olive oil
– 3 tablespoons butter
– 2 teaspoons fresh rosemary, minced
– 2 teaspoons fresh thyme, minced
– 2 cloves garlic, minced
– Salt and pepper to taste
For the Potato Foil Packets:
– 2 pounds baby potatoes, halved or quartered
– 1/2 cup heavy cream
– 4 cloves garlic, minced
– 2 teaspoons onion powder
– 1 teaspoon dried thyme
– 1/2 cup shredded Parmesan cheese
– 4 tablespoons butter, cut into pieces
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Directions
1. Preheat your grill to medium-high heat or your oven to 400°F if you prefer to bake.
2. In a bowl, toss the potatoes with the heavy cream, minced garlic, onion powder, dried thyme, Parmesan cheese, and a pinch of salt and pepper.
3. Lay out four large pieces of aluminum foil and evenly divide the potato mixture among them. Top each with a tablespoon of butter.
4. Fold the foil over the potatoes to create a sealed packet. Grill or bake for 20-25 minutes, or until the potatoes are tender.
5. While the potatoes are cooking, season the steak bites with salt and pepper.
6. Heat the olive oil in a large skillet over medium-high heat. Add the steak bites, cooking for 4-5 minutes until they are seared and browned on all sides.
7. Lower the heat to medium, add the butter, garlic, rosemary, and thyme to the skillet. Sauté for an additional 2-3 minutes, constantly spooning the herb butter over the steak bites.
8. Once the steak bites are glazed and the garlic is fragrant, remove from heat.
9. Check the potatoes for doneness, and once ready, open the foil packets (be careful of the steam) and sprinkle them with fresh parsley.
10. Serve the herb butter steak bites alongside the creamy garlic potato foil packets. Enjoy the burst of flavors!

 

Variations & Tips
– For pickier eaters, you might substitute the herbs in the steak with just a tablespoon of Italian seasoning for a milder flavor.
– If anyone in the family isn’t a fan of sirloin, try using chicken or pork; just keep an eye on the cooking times as they might differ.
– Feel free to mix in other veggies to the potato packets, like chopped bell peppers or zucchini.
– And for those busy weeknights, prep the potato packets ahead of time and store them in the fridge until you’re ready to cook.
– Always let your meat rest for a few minutes after cooking; it allows the juices to redistribute, making your steak bites mouthwateringly tender.
