• ingredients:

°1 C white sugar
°1/2 c brown sugar
°1 tsp baking soda
°2 cups flour
°2 eggs
°1 can pineapple
°1 cup finely chopped walnuts (or crushed)
°3/4 cup shredded coconut
°1 teaspoon cinnamon
°1/8 teaspoon nutmeg
°1 teaspoon salt
°1 teaspoon vanilla

  • instructions:

Mix all the dry ingredients together in a bowl.
Then mix the eggs, vanilla and ground pineapple with all the juice.
Pour to greased 9″ or 9″ * 13″ rectangular skillet
Baking about 36-40 min at 350 degrees . You can serve it this way if you want…or you can elevate it a bit with our simple Whipped Cream Cheese Frosting!
For whipped cream cheese, you will need:
1 package (8 ounces) cream cheese (let it come to room temperature for easier mixing)
1 cup white sugar
1/8 teaspoon salt
1 teaspoon vanilla
1 1/2 cups heavy whipping cream
In a small bowl, beat the whipping cream until stiff peaks form. Set aside in a large bowl, combine cream cheese, sugar, salt and vanilla. Beat until smooth.
Gently combine the cream cheese mixture with the whipped cream.
