Ingredients:

  • 4 large russet potatoes, peeled and cubed
  • 3 large carrots, peeled and sliced
  • 1 large onion
  • 4 cups frozen green beans
  • 4 cups frozen corn
  • 4 cups tomato juice
  • 2 cups water
  • ½ pound of ground beef
  • 2 bay leaves
  • ½ tsp garlic powder
  • 2 Bay leaves
  • Instructions:

    1. In a large saucepan combine the potatoes and carrots, onion, salt and pepper.
    2. Add in the 4 cups of water and bring to a boil
    3. Cover the pan, reduce heat to a simmer
    4. Simmer for 25 minutes or until the vegetables are tender.
    5. Add in the remaining ingredients and continue to simmer for another 25 minutes
    6. Stir occasionally
    7. Remove the Bay leaves before serving the soup
